The cheese cellar in Lingenau is the place to not only buy and taste cheese but also to see it mature. There is a glass wall that even allows visitors to see into one of the three maturing cellars where it receives careful attention from the fully automated systems. Up to 50,800 wheels of alpine and mountain cheese are stored in the three cellars. That is an impressive total – so it is hardly surprising that this cheese cellar is Europe’s largest centre for maturing and taking care of mountain and alpine cheeses. Farmers and alpine farmers, alpine dairies and cheese makers and many others got together in 1998 to establish the KäseStrasse Bregenzerwald (Bregenzerwald Cheese Route). A film has even been made about its history and how unique it is – a presentation is given and the KäseStrasse film is shown on guided tours of the cheese cellar. It is, of course, possible to taste the cheese specialities afterwards and a cheese and wine tasting with sommelier is available to groups on inquiry.
A tip for fans of architecture: architect DI Oskar Leo Kaufman is no stranger to the Vorarlberg architecture scene and the creator of the monolithic structure made of exposed concrete.
