Every child knows that cheese is made from milk. But hardly anyone knows how milk is turned into cheese. So why not finally get to the bottom of this mystery and, while doing so, take the opportunity to nibble a little of your favourite dairy product? That is exactly what the cheese-making demonstrations at Käsehaus Andelsbuch are for. They allow visitors to take a peek behind the scenes at an alpine dairy as the workers process the warm milk in the vats with the rennet and then cuts the curd with the cheese wire to get at the valuable whey. The cheese-makers share the inside stories, chat happily about the Bregenzerwald and reveal how cheese is transformed into a highly refined delicacy while doing so. With opportunities to sample the product, of course. Visitors may also combine the tour of the show dairy with lunch at the Käshus Wirtschaft (restaurant) where cheese from the alpine dairy is served – perhaps as Bregenzerwald cheese soup, as cheese dumplings or as a colourful cheese board. The Käshus Wirschaft offers space for groups of up to 50 people.
